I've been tapped to do a wedding reception next month, and need some guidance on the meats. There will be 60 reasonably hungry people and a few kids in attendance. The father wants brisket, PP, sausage and chicken leg quarters.

Can you folks lend some expertise on quantities for this? I'm sure if I follow my instincts I'll really overcook - I have a history of that.

Thanks in advance for the help!

Wow, that be a fair number a choices.

On brisket an pulled pork I figure 1/4 lb per sammie x the number a sammies ya wan't.

So lets say ya wan't 100 a each (brisket,PP) yall need 25 lbs a meat each type, an I always figure 50% loss, so yer gonna need 50 lbs a each raw.

Sausage is gonna depend on what type an how many folks er gonna be eatin em. I generally make up my own an use a 5 inch link. Don't know yer crowd, I'd figure on 75% of em eatin a link each.

Chicken I'd prolly figure on 75% of em each gettin a quarter. This should cover the over eaters an the folk what don't wan't the sammies. Yall know the crowd better then me. Ya can adjust ta the style a folks, be they yuppies er redknecks. I'd ask the boss how many sausage an how many chicken they wan'ts just to give yerself an idear what there thinkin bout.

Kids might eat chicken er sausage, but it never hurts ta do some bacon dogs fer them.

I would go with what tips said up there for he's done and bunch hickens feeding in his time I'm sure.
