Hey guys. Started my pork butt yesterday at 5pm. When I went to sleep at 10pm, the internal temp was 135°. I calculated the smoker turned off around 1245am. It’s currently 230am when I checked and the internal temp is 140°. But the smoker temp was 78°. Also I’ll add I have a Masterbuilt Electric Smoker. Should I toss the meat or you think it’s still good? I turned the smoker back on and internal temps are at 135° now. Thanks
 
You are fine. It was 140°F temp so thats still a safe temp; even 135°F can be safe if its held long enough. Pathogen issues are extremely rare on cooked intact meat.
 
Some quick advice:

A decent dual probe thermometer with hi/lo temp alarm will save you from ever having to ask "is this meat ok?" and you'll sleep better!

Definitely agree with normanaj normanaj . There are far too many reports here on SMF by people discovering their smoker died over the night. An ounce of prevention by using a good dual probe thermometer with an alarm (hopefully one that triggers the cell phone by your bed) will keep one from being surprised and potentially having to throw out whatever they were smoking. FYI, test it to make sure it's loud enough to wake you, ensure the phone is plugged in and the batteries are fresh in the thermometer. In this case you were fortunate. Don't play Russian Roulette when you smoke!
