My name is Doug and I have been smoking for quite a few years. I have been lurking and learning quite a bit on these forums so I thought it was time I become "official". I started smoking with a charcoal bullet smoker but have moved to a Masterbuilt propane smoker that I have replaced the wood chip box to allow me to throw in a few lump coal chunks as well as wood chunks and chips. I like using the combo as all of the wood smokes at different rates and gives me a smoke that starts fast and continues for a long time without having to open the chamber as much to add wood. I have done a little bit of everything from pork butt and brisket to lots of deer jerky and sausage. I hope to continue to learn a lot form you guys and maybe add some "meat" to the conversations on the forums!
