Found the site researching smokers. Couldn't believe the resources. I have cured pancetta in the past and made sausage. Tried soprasatta with not so good results. The site has really got me motivated to try again with all the info and help. No smoker yet but got a NESCO FD-80 for Christmas have made some apple slices with it and drying some jerky this weekend.
