My name is Patrick and I'm just getting into smoking sausage. Last October the neighbor brought me over a stick of sausage for my 35 birthday. Ahh nice. Whatever. One of my best friends was there and he was a meat man and meat cutter most of his life. He knows quite a bit. My neighbor traps bear, hunts, taps trees, he got me picking berries, jam. Anyway we opened up the sausage and the angels came from the heavens. It was peeled and eaten like a banana. After the sausage was gone all my thoughts were about that fine food. Little did I know 5 months later he would be teaching me a time honored tradition, passed down generations. Many secrets. The spices are still a secret. But the next year every week and a half I get my fix. Soon here my own smokehouse will be build so spices recipe can get started on. Maybe a little fruit wood? Just a little apple with alder. O I'm from the cheese state so you know it's gonna get cheese too. I have fun and be safe.
