 We use J @ R 700 NSF wood burning Oyler BBQ Pit. We mainly use seasoned hickory with a touch of apple then oak to hold temp.

I am always looking for hickory! Nice to meat you all!!!

Welcome Jon! I would think a consistent source of hickory would be a challenge!  What type of source do you have now?  I am trying to think of other sources in that area. 

What do you have on the menu?  Might try and stop by some time if I am in the area.
