I am new to smoking and recently purchased a 820D pitt boss and love it! So far have only smoked wings, rib eyes, chicken thighs, burgers, hotdogs, and a Boston butt. When I tried to smoke the wings 45 min on low smoke per side the skin turned out tough, although the meat was juicy. Does anyone have any idea of why that would happen?
