Hello from VA!
I am new to smoking and recently purchased a 820D pitt boss and love it! So far have only smoked wings, rib eyes, chicken thighs, burgers, hotdogs, and a Boston butt. When I tried to smoke the wings 45 min on low smoke per side the skin turned out tough, although the meat was juicy. Does anyone have any idea of why that would happen? Thanks for your help and happy to learn more from this site!

For chicken skin to be crispy you have to finish at a much higher temp than what you cooked them at. If you dont mind can you share with us the cooking temp you smoked at. If we know a few more details about the cook we can definitely help you out or point you to a thread or another member that can get you the info you need.

Welcome to the site, yeah I agree with the above. You'll need to get the temp up to at least 325* for crispy skin. If you can't do it with your smoker either try a gas grill to crisp them up or under the broiler in your oven for a few minutes.

thank you guys, that was probably my problem. the pit boss stayed around 170 and I didn't know to finish at a higher temp. thanks for all the help. im a newbie lol
