HI,

I'm an untrained cooking aficionado in Trinidad in the Caribbean, who loves to make sausages, smoke and grill.

Just made some belly bacon for the first time , and will be posting pics and hope to post some pics soon.

Also, I made some "fatties" some months ago, they were great; however I don't thinks my heart, and those of my friends, can take that fat assault too often during a year!

Welcome from my outpost in the far south. Nice to have another member from an exotic cricket playing location. Are you going to show us some authentic West Indies food? Lot of skilled cooks on this site that range across cooking genres always looking for something new & different. Me I like fusion food that was fused naturally over generations not some trendy train wreck of cuisines.I figure Trinidad would have some Spanish,African,Indian& ?? influences.

Talking about cricket, you guys did not do too well today,as did the WI a couple of nights ago.

I hope to contribute some "local" stuff as I have lived in Jamaica, Antigua and Trinidad.

Curiously, one of my grandfathers came to Trinidad from Australia (he was born in England, but migrated to Oz when he was very young)

I've also got a bunch of friends in the Cairns area.

Made some belly bacon the other day; I'm going to try to post some pics later.
 
welcome to your new addiction (forums)... be interesting to see some grub from down your way... just remember when you post some pics they will be held in SMF "jail" until a moderator approves them (until you have something like 10-20 post).. so if you don't see them right away please do not send again (double post)...

One day I'll post pics of my "fusion" fatties - brat pork sausage on the outside, stuffed with Mexican cheese, jalapeños, mushrooms, red bell peppers and a small log of chicken jerk sausage in the centre for good measure.

 Yes we let the South Africans of the hook in the cricket but as a team we have turned the corner.The English are going to cop it. Some of the greatest sporting memories this country has is Cricket against the West Indies,all the way back to Wes Hall,Garfield Sobers,then onto Garner ,Holding,Roberts,Lloyd, Richards & so on. The West Indies touring side in the mid 60s played a game in the little country town I was from against a regional side .I still have the autographs somewhere including Wes Hall & Charlie Griffiths .
