I finally signed up so I could say thanks for the help I've gotten from this forum just in a couple weeks. I guilted my husband into buying me a Cabela's special MES 40" for forgetting my birthday. (That was fun!)

I found this forum looking for smoked ribs and hit on this post from @noboundries https://www.smokingmeatforums.com/t...this-really-works.240916/page-19#post-1790116

I gotta say, they were almost perfect, the "almost" part solely my inexperience. For one thing, I used a generic store bought pork rub that was da** disappointing. (I just ordered Jeff's rub recipe a few minutes ago.)

At one point, I started fretting about the clouds of white smoke instead of TBS so I hit the forum again. https://www.smokingmeatforums.com/threads/rookie-mistake-horrible-bitter-aftertaste.84112/

I had a good laugh, especially the SOTBWS link, then freaked out, ran out to my smoker, threw the door open for a second and watched the smoke suck out into the open air. Problem solved I hoped.

They turned out almost great and I even got excited about the little bit of smoke ring. My family humored me by listening to me educate. They humor me a lot.

And even though he forgot my birthday, my husband's a keeper. He even helped me find a cheap shelter since I was too impatient to wait for good weather and he set it up for me (with a few choice cuss words as he struggled with it of course). It worked great in the rain. So basically, I got a lot of mileage out of the forgotten birthday and he got a great pile of smoked ribs. :) Sorry but the ribs were almost gone by the time I remembered to take pics!

Welcome aboard Tess, I'm glad the ribs turned out great. Allot of folks here use the MES so there's a ton of info on your smoker and how to use it. Looking forward to hearing more of your accomplishments, and don't be afraid to chime in to others posts.

Point for a successful first smoke.
