Hi everyone,


My name is Eddy and I'm from the Netherlands. I've been cooking on a small offset smoker for a while now, but I'm currently working on building a traditional 100 gallon offset smoker from thick steel.


In the Netherlands it's hard to find well-built traditional offsets, so building one myself seemed like the best option. I'm especially interested in traditional stick-burning offsets and fire management, and I cook year-round in our cold and damp climate.


I'm still learning and trying to do this build the right way, so I'm hoping to learn from the experience of people here.

Welcome aboard Eddy. I had a friend in college from the Netherlands. He brought over a case of Heineken and made believers out of all of us. So much better than the stuff sold in America.

Thanks Chris! I'd say Dutch beer and American BBQ is a winning combination. I'm working on getting the BBQ part right over here.

Thanks! No doubt you can help me decide whether to insulate the firebox on my future 100 gallon offset smoker, since you know what it's like cooking in this kind of cold and damp climate.
