Hi,

My name is Scott Phillips and I've lurked around Smoking Meat Forums for some time, all the while learning a great deal from all of you.  First off, a big thank you is due!

I got my first smoker nearly 30 years ago when I was twelve - a Little Chief - because I wanted to smoke fish.  Over the years I've mainly been interested in making jerky, smoking fish, making sausage, curing Canadian bacon and smoking cheese. I just completed a new PID controlled freezer conversion with a cold smoker and fan in the door.  Much of what I learned here in the forums helped this conversion turn out great.

Welcome, I used to live in the Ketchum sunvalley area for many years. Great to see some Idaho on here. Can we see pics of the Fridge?
Very close to me was just thru waitsburg the other day Are you doing a fridge also or thinking about it.?? They are great and big. I have 7 racks in mine.  I will try to get you some pics if you want them.
 
I do have A freezer load of salmon to smoke. I was thinking about building one yes. I have a line on 50s steel fridge here in perfect condition. Only thing is that it is in perfect running condition. Works and looks like brand new. Kind of a shame to mess it up I guess.
