Hello All!
I have been sneaking around on this forum, looking for some quick answers here and there. I thought it time to sign up and join the forum.
I live in Long Beach, CA and have just started smoking meat....and I'm hooked. My WIFE wanted a new gril. I wasn't too into grilling at the time so we just got a cheapo Char-Griller. I went ahead and bought the offset firebox for it and told myself I would smoke something for the heck of it. Begin 2 long days of research and BBQ modification. Once finished modding my rig I threw on a pork shoulder and smoked the heck out of it for 11 hours. Everyone said it was amazing. After that I have a list of more mods that need completing and I just bought a 12 .lb brisket to be smoked this coming weekend.
As far as my smoking experience...that is it. I really don't know too much. I don't have any recipes. I don't know what types of wood to use for which kinds of meat. I don't know rubs or marinades or cook times. All I do know is. It is all about temperature and keeping the temperatures in the right places for the right amount of time.
I will browse through the forum more looking for some awesome How-To smoke brisket threads. Or some tips and tricks. If there are any threads that explain the basic smoking practices that any newbie should read, please send them my way.
