I am just beginning to smoke, but have friends who are really into it and use my MES 30". I have to say it is a piece of crap, but their customer service sent out new parts (Thermostat never worked and the wood loader fell apart after a dozen uses). But, we still use it manually loading chips and sticking an external thermometer in the meat.

I will replace the bad parts when time permits and smoke till it fails. But, next time, I will look at all the reviews and search for quality.

Anyway, I look forward to all the recipes and suggestions. - Ed
 
Hello Ed and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

where abouts in socal are you? i also am here in socal on camp pendleton. welcome to the forum theres tons of info on here, anything you can think of just use the search bar and more than likely there will be a dozen or more threads for what you're needing
