I am a life time tradition cold smoker,I have 2 walk in wood outhouse style smokers at home and deer lease,at home I have propane capabilities ,cold smoke can be a challenge on the gulf coast .
I smoke sausage, Slim Jim, p loins,hams,cure chich&turkeys,bacon, dried sausage, you name it I have tried to smoke it, including myself! I do about 400+ pounds every year.
I live on the water and fish every day and can smoke pretty mean Red Fish on the Half Shell!
