Hello folks, I am new to this site and am really looking forward to learning all there is about smoking meat!  I have grilled for years, I have been slow cooking pork shoulder in the oven for years, and I have created my own bbq sauce but something has been missing, SMOKE!  I love brisket, pork/beef ribs, burnt ends, smoked turkey/chicken but know very little about how to smoke these meats myself.  Can anyone recommend a book that outlines how to get started, cooking temps/times, etc....?   I was thinking about buying a indirect charchol smoker from lowes or home depot, i dont really have the money for a pellet smoker or a place to keep an electric smoker....thanks for the help, advice, and knowledge, I appreciate it. ~Anthony
 
Hello everyone, My name is Anthony and I live in Salem, NY.  I am very fortunate to live in farm country and my wifes family owns a dariy farm.  We raise our own beefers, grass fed, no hormones or anti-biotics.  We also raise our own chickens and pigs so its only natural that I have caught the smoking bud.  With all of this locally raised meat how could you not!  I have been grilling for years, I have been cooking my pork shoulder in the oven and have created my own bbq sauce that compliments all types of bbq but this is all missing one thing, SMOKE!  I intend to buy a Brinkman smoker from home depot to get started, I dont have space for an electric smoker, i dont have the skills to build my own, and I dont have the money for  pellet smoker.  I am looking forward to learning all i can from you folks and maybe some day I will be able to offer some advice.  Thanks for reading, ~Anthony
 
I recommend getting a WSM from Lowes or Home Depot instead.  I started with an el cheapo offset and quite frankly it set me back in learning to cook.  It's hard to keep temps, leaks like a sieve, needs a bazillion mods to work right, and takes up too much of a fotprint IMHO.  That being said, I recommend the book Low and Slow by Gary Wiviott.  He has a tough guy schtick/attitude in the book, but I guarantee that if you follow his five lessons ver batum, you will come out the other side with the knowledge it takes to cook good BBQ.  It works.
