Kind of happened on this site by accident looking up something for work. Most of my smoking up to this point has been stovetop in the restaurant, nothing close to the time, passion and creativity I've come across in the forums here so far.

Soooo.. a friend of mine who has been smoking everything and anything for years, decided it was time to buy a new unit, blessing me with his old dual chamber smoker. Going to do a little clean up on it, some minor mods, then fire it up for the spring. His new one is electric, uses the compressed pucks, etc. Personally, I've been using wood and charcoal for outdoor cooking, can't stand the propane ones, so I think I've got a good head start.

I've been cooking professionally for almost 25 years now, got a little know how under my belt, and look forward to contributing to the site.

Welcome to the forum from Boston ,there , snafu. I love it when people who cook professionally get into smoking , because a lot of the stuff you do in restaurant cooking translate really well to the smoking arena. Look forward to hearing from you.
