I started smoking my own meats 5 years ago. My first smoker was a basic red Brinkman's electric smoker. Then about 2 years ago I built a 55 gallon drum smoker but I realized that for the amount of meats I smoke, the smaller Brinkman's would do just fine and would be cheaper and less labor intensive to run. I definitely want to build my own, that's more heavy duty but smaller then a 55 gallon drum. So my online search for a smaller, more compact, and "self running" smoker has brought me here. I have found a SS keg smoker that another member has posted that I think will be perfect for my needs.

Instead of using charcoal, I would use the electric element from my old Brinkman's Smoker. The "dinner plate rack" is a great idea and would give plenty of cooking/smoking space and allow for a water pan. I'll post pics of the progress and build.
