New here and just getting into smoking. I have smoked a few times with my dad but that has been a few years ago. Went out and bought a master built propane smoker single door. Seems like a good smoker to start with. I have seasoned it and smoked a few things today that turned out pretty good.
Started with a fatty this morning at 7am. Smoked for 2hrs 45min. With just a cheese filling.
Then at 2 put on some baby backs with a home made rub. Smoked for 2.5 hours only because I kept opening the door to check the smoke as it was going out every 15 minutes. I have a pan I put chips in and cover with foil with 4 pin holes. Anyway to get longer than that out of a pan? Anyways foiled with apple juice for 1.5 hours and then 45 min to firm up and thin layer of sauce at for last 20.
They turned out pretty good. Wife wants more smoke but they had a nice smoke ring. I think they may have been a little dry from being in there 2.5 hours before putting in foil though. They was about right on tenderness. Would pull off bones nicely but not fall off. One thing is the top was very delicious but meat closer to the bones and middle was sort of bland. Anyway to compensate for that?
