Hi Everyone!!

Finally getting around to joining some forums to learn some new tricks! - in NZ they mainly use the grand old LPG 3 burner grills so I'm a little different with my 2 Kamado Joes,  Traeger Texas Elite, and my current project a vertical 4 rack smoker! - if thats not enough I'll be bringing in a Lang or a GatorPit - I might be needing to get a divorce first though :)  Look forward to chatting with some like minded folks and learning some tricks from the world of BBQ :)

I have a Brinkmann SnP that I got for free and made mods to it and still all for free.

Thanks for the welcome! we are a little unlucky here for flavoured woods, we get Apple, Cherry, We can only really get the American woods (Hickory, Mesquite etc) in Pallets or chips from certified companies due to environmental folks!  The NZ equivalent of Hickory here is Ti tree or Manuka, its a sweet wood but no good for low and slow and is it is really powerful.  Natural lump charcoal is good here and the best stuff I have used is made from (believe it or not) Mangroves!!! it used in a lot of the best Grill restaurants here and is a bit of an NZ secret!  I've just posted some photos hopefully they pass the Q test :D
