Hey,
It's a pleasure to be here .I am a newbie
I visited my friend in Virginia had has a acorn smoker and made me ribs.. Well that's all it took!! I have a chargrill duo with a side firebox
( really a trio) I have made the following mods:
I lowered the smoke stack to the grill level, I have made a 12x12 charcoal bin for the fire box, installed two thermometers at grill level
And have a horizon convection plate on order.
What else do I need to do?
 
Welcome aboard!  You'll find that this is a great place to share ideas on smoking, grilling, etc.  There are plenty of folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.

I have cowboy charcoal , apple wood and brickets to use in the chimney as a starter
