Hi, I'm new to smoking meat and I have to say it is quite an addiction.  I got interested by watching BBQ Pitmasters and after doing some of my favorite thing, Googling, I found the UDS.  I had access to several lube barrels so I gathered the basics and built it on a Saturday and smoked my first rack of babybacks on that Sunday.  So far I have two sessions under my belt and though not perfect, I am happy with the results.  The UDS is proving to be very easy to maintain temps in and it doesn't  seem as though it could be any easier.

My first smoke with a rack of babybacks turned out good, the only problem, they may have been a little overcooked and were a little dry.  The second smoke was yesterday which was 2 racks of babybacks and a 3.5 pound turkey breast.  The turkey was perfect, nice and juicy, great smoke flavor and even my wife enjoyed it.  The ribs were not dry this time, but they were not very tender either.  Definitely have more work to do there.

I'm looking forward to continuing my learning from everything you guys have to teach and hopefully soon, I a can offer information to help others.  Thanks for providing such a great place to learn and inspire.

The UDS are great !!! I can get 20+ hours out of full basket of charcoal.
And the temp is so easy to control
