I have been grilling for 25 years both charcoal and gas. Just baught a verticle Brinkmann charcoal - and did the modifications right out of the box. So far so good. It holds at 225-260 for about 4.5 hours and then starts to drop off. My first smoke will be this weekend - 8 lbs. chicken leg quarters.

Well, I did it. Windy as all get out - used a folding table as a wind break. I seasoned the chicken with a rub early in the AM and put it in the fridge all day. I needed to hit 225-250 deg. from what I read here - was able to do that until I loaded the meat into the smoker. Maybe rookie error here. I put the chicken in at 230 deg. and it dropped to 165 deg. then over and hour it finally climbed up to 235 again. After that, it climbed up to 255 and held there after re-stoking the fire and shaking the coal pan up a bit. Total smoke time was just under 3 hours and finished with 10 min. on ther grill.

-My Opinion: Chicken cooked great - really moist and cooked all the way through. Skin was rubbery. Seasoning was awesome.

-My family's opinion: Wife= Fantastic! , Kids= Boy loved it and ate almost a whole leg qtr. , Girl peeled the skin and ate meat only ( OK )

Overall a success I think. Origianally I though my mods to the smoker fixed the low heat issue, I need to look into that more.
