Hi Smokers!

I'm Andy from Guildford UK.

I'm 52, and I love food and been into cooking and experimenting with food all my life.

I've got the smoking bug bad, after seeing too many episodes of Man V Food, but have so far only smoked a sirloin steak on my mother's weber gas bbq, using some hickory sawdust bought locally. Good flavour but a bit dry. Practice makes perfect!

So I need a smoker - not sure whether to buy one or make one, but I have been kindly advised that there's a forum about just this :)

I spent most of today, cutting down unwanted apple wood branches, which I plan on using for my next smoke quest, using some mackerel fillets. I shall keep you posted.

Smokers are really becoming a personal preference. I like the ease of an electric smoker , as i tend to just through something in , in the spur of the moment.

Whatever you choose, remember  low and slooowwwww.

Hello Andy and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Hi Andy, sounds like we've been on a parallel universe ! My son's coming round tomorrow to cut back our cherry tree, so we'll be stacking that up to dry and I'm gathering up the bits to make a UDS.

I would be interested to know how you prepare your cherry wood size-wise, and how long you leave it before using?
