Hello from Knoxville TN. Long time lurker finally got around to signing up. Been smoking for about 6 years now and cant tell you how much valuable information I have gotten off this site! Have an older Masterbuilt analog smoker, an SV24, and a newly acquired Cabelas MES40 along with an AMNPS. Just wanted to give a big thank you to all of you for the help along the way. I've gotten numerous recipes and insight from you guys and actually researched for a long time on this site before deciding on the SV24 and the MES40. I didn't even know what an AMNPS was before I read on this site! Hit all the sales over the winter and have a freezer full of ribs, butts, pork tenderloins, wings, chuck roasts, etc...Even got a fridge full of cheese I am fixing to give a 1st try here soon.
