Hello,

I'm new to this forum and to smoking. I live in Darien, IL which is about 30 min. west of Chicago.  I was given a Brinkmann Smoker for Father's Day and am finally getting around to using it. I seasoned it well this morning. I hope to smoke a whole chicken tomorrow. I have my dry rub already put together and plan on using mesquite wood chips.

I'm well aware of the modifications that people have posted and talked about concerning the brinkmann. I figured that I would just give it a try before I start messing around with it too much. I am concerned with how to keep the fire going. How much charcoal and wood chips should I be using? I did invest in a charcoal chimney yesterday. This seems to work really well.

Thanks. I'll check back here soon and give you an update.

Steve

Welcome Steve, and it looks like you're a neighbor. My primary residence is just a little east of you in Hinsdale, IL.

Can't help you with the Brinkman but there are many others on here who can.

Good luck with the chicken, and let us know how it comes out. Pics would be great.
