My name is Henry and I have been grilling for years, and only started smoking in the last couple years. I'm a huge fan of dry rubs and off the wall recipes. I grew up in the Texas panhandle where beef BBQ is king, and I never really cared for meat drowned in sauce, which is what I was exposed to growing up. In my early 20's I took a job in Memphis TN. My employer took me to dinner one night at the world famous Rendezvous in downtown Memphis. I asked what was good and he said try the ribs. So to be polite, I ordered a half rack, since being only exposed to beef BBQ, a half rack was a big meal. When it came out, I was surprised to see a very small slab of ribs. I asked if it was a calf. My boss laughed and said 'Haven't you ever eaten pork BBQ?'  Well needless to say I have been hooked on pork ever since. About the only thing beef I'll grill or smoke are steaks, burgers and the occasional brisket.

Anyway, I look forward to learning a lot here.
