I finally broke down and bought a Weber Smoker.  For a long time I contemplated a bunch of models and finally looked at a Weber. In the last month I have smoked chicken quarters, ribs and yesterday turkey.  I think I finally have an idea of how much charcoal to initially start with and yesterday barely wrestled with my charcoal.  

For years I did beer can chickens and ribs on propane, and look forward to smoking up a storm.  

Next up on my queue is a ham.....
