I'm from Cajun country, southwest Louisiana. Been using a small smoker for years and also using a friend's walk-in smoker. Just tire of having to haul sausage there to smoke. I have made close to 1000 pounds of sausage in the last couple of months. So I'm getting ready to build my own smoker. Picking up the 1x12 cypress this week. It will be 4x4by 8' tall. Will have a firebox on outside with propane burner. The fire box will be made of concrete. I'll post some pictures after I get started.

A bubbly and I usually make about 2500 pounds a year using the same recipe. It must be pretty good people keep asking us to make it. Lol
