Hi Guys,
Thanks for having me.
I currently own a meat market with a large summertime outdoor food trailer. We’ve been doing burgers, hot dogs, sausage sandwiches and curly fries for years.
I want to add in smoked meats, and I thought I would learn as much as I can before purchasing equipment.

I am open to all suggestions on how to get started on the right foot.

We both grew up in the B'lo area-me in Amherst and my wife in Elma. A son, nephew, niece, SIL and two BILs still live in the area with their families.. We had a farm in CNY until last year when we retired to our NC place....
