I had some at a Night Market in Kaohsiung Taiwan and am now obsessed with doing it myself whenever I can😁

That sounds really interesting, I'll have to try it out.
Apart from that, a real Bavarian Schweinshaxe is from the wood-fired oven is best prepared by grandma :-)
But the principle is the same, low n slow and then conjure up a really nice crust on top.
