Smoked this pork scotch fillet today. Marinated it in a zip lock bag with some soysauce, sweet soysauce, teryaki marinade with some dill, parsley flakes, and rosemary.

Looks great ! Sliceable roast pork is a favorite here . I do pork cushion which is similar to a Scotch fillet .
Looks great , and nice flavor profile .

Back in the day ?
I worked @ Ground Round Rests.
We diluted the teriyaki sauce with OJ.
For NY Steaks. added a grilled pineapple slice on top !
That's where I got it from !

Lookin' good! I can vouch that the pineapple juice would be great! Do something similar (soy sauce, brown sugar, pineapple juice, garlic, and ginger) when doing Hawaiian smoked meat.
