Smoked this pork scotch fillet today. Marinated it in a zip lock bag with some soysauce, sweet soysauce, teryaki marinade with some dill, parsley flakes, and rosemary.

Boned , trimmed and rolled shoulder . More of a style than a cut . Like London broil is a style / cooking method . You can get beef scotch as well . Mostly outside of the US . Don't usually see them here .never heard of a scotch filet
