it's very nice to meet you. Real name is George and I hail from Houston Tejas and have a few years smoking experience. Though it has fallen into disuse for a few reasons.
I had a Brinkman, the pill shaped thing, gas fired. It had a lot of miles on it and the bottom kettle had big holes in it.
I got to this forum as I was doing research on a new smoker, so I took the recommendations and went a huntin.
Additionally, I saw a recipe here for Shredded Smoked Beef Enchiladas and any resistance melted.
I found a Masterbuilt Pro on Craigslist at a terrific price so that's what I have and just got done putting it together.
My 1st smokin will be for the enchiladas. I used to be pretty good doing a smoked turkey so I am sure that I will be drafted to do that again.
Now on to a few questions if you don't mind.

1) The book that came with the smoker insisted that only chips be used, not the chunks. Yet I swear that the salesman at the local BBQ supplies house said to use chunks. So is it chips or chunks ?

2) My wife is keenly interested in dried vegetables. Such things as mushrooms, zucchini, parsley, etc. Is there a way to use my vertical smoker to help her ?
What she does now is to spread them out all over the living room floor. EGAD!!

3) I have some lava rocks from my prior smoker and are they of any use in the Masterbuilt ?
