I am an inexperienced amateur in the Smoking arena. I received a 40 inch Masterbuilt smoker for Christmas and have tried a few entrees, so far they were great.The only trouble I had was I tried the injected Brisket at 200 degrees and ended up with a lot of wood chips that did not burn. Is 200 too low to burn the chips or do I have a thermometer problem. I have been trying Jeff's recipes for a few years now and have enjoyed all of them. Thanks Clyde.
