Hi Guys. I'm Derrick from Canton, OH. I've been wanting to pick up a smoker for a while, and just recently bought a 18.5" WSM. I just fired it up for it's inaugural smoke, and everything went brilliantly. I went simple and started with a beer can chicken, a quick rub down with olive oil and some lemon pepper and Weber Kick'n Chicken.
I ordered an A-maze-n pellet smoker which should be arriving tomorrow, so the plan is to cold smoke the 8 lbs of bacon that's been dry curing in the fridge for the last week and a half. And the wife wants me to do a turkey breast at some point this weekend too.
Other than that I am a Palio diet follower, pipe & cigar smoker, who enjoys long moon lit walks on the beach, puppies, and the Pittsburgh Steelers.
