I have been frying turkeys for about 10 years now and decided it is time to try smoking.

I have 6 frying pots but no smoking equipment yet.

The wife loves pulled pork, but does not like allot on smoke flavor.

So this could be a challenge starting out.

 When you start smoking  and get ready to smoke a butt Use a fruit wood like apple or pear or peach.

 This will impart a nice smoke flavor ,But it shouldn't be as heavy as pecan or oak or hickory.

 Stay away from misquete

First off Welcome Phil to SMF. You'll like it here for there are a lot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are a lot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

Welcome to the SMF. If your wife is not too keen on the smoke flavor, you may be able to limit the amount of wood you choice for smoking, or choose a milder type of wood. It's all good my friend.

I am going through the e course this week and will be giving it a try next weekend.
