I found this site looking for info on smoker building. I have learned so much just reading your post's. I have a Stainless Steel Upright commercial freezer tying to convert to a smoker, but was not sure on the inside part.

 I am sure that at sometime someone here has  built one .

 If you are wanting it to hot smoke with you will probably have to replace all the insulation in the unit.
