Well I did it again and disappeared for months (a year?!) - sorry y'all. Life has been lifeing lately and with two kids, a demanding career, and a couple of other hobbies I went ahead and fell off the map...again.
My son turns 8 next Saturday, hard to believe. He's requested a pool party, same as last year. In the age of over the top kids parties at excessively curated and structured (and EXPENSIVE) locations, wouldn't you know it - he loved his pool party last year and his friends said it was the best party of the year. Just a bunch of boys acting like fools, having a blast swimming.
Anyway, we'll make the kids smash burgers, pulled pork sandwiches for the adults. Ran the smoker yesterday for that pork and decided to throw a rack on for our dinner.
No pictures of the finished PP, but it's with the SMF rub and will be finished with JJ's finishing sauce (RIP) on Saturday. Wound up with 7.4lbs finished PP from two picnics.
The ribs are SMF rub with sweet baby ray's sauce in the end. Wound up doing a 3-2-1 wrap with butcher paper for the first time ever. I think I'm converted to that method. Best ribs I've made in years.
