Hi everyone.  My name is Steve Ervin and I'm a crusty old gravedigging vet who lives in a small farming community in northern Indiana just 30 minutes from lake Michigan and 15 miles south of Notre Dame Univ..  I used to be a member here a few years ago but lost my login info so I just created a new account.  I sold my side box Brinkman and pretty much left the world of smoking meat to devote more time to my art career.  Now as I quickly approach retirement I decided to get back in since I will have more time available soon.  I purchased a Camp Chef Woodwind pellet smoker with attached sear box to get started and I must say I'm pretty excited to re-familiarize myself to the world of cooking with wood again.  I'm so rusty that it's like starting all over again (which is pretty cool) so be patient with me if I ask too many silly questions in the near future.
