So my plan to smoke spareribs today blew up when Sam’s was out of them. So I went with the next best thing. These racks of baby backs are ridiculously thick. Look at the end of the one I’m holding. It might as well be a tenderloin. I rubbed them down with a generous coat of Jeff’s rub. Running pecan and cherry for smoke today. I hope everyone has a great day.

Don’t want to disappoint you but these are baby backs. Just some of the thickest baby backs I’ve ever bought. I sure am looking forward to some yummy ribs for dinner.

Alright here is the payoff. Man these ribs were delicious. So meaty! I don’t think I’ve ever bought a meatier rack of ribs. The sorry thing is that I ate four of these bad boys. With the beans and deviled eggs I am absolutely stuffed. So here are the final pics.
