Welcome Spenc123420. I'm guessing you have a smoker roughly 4 foot square, + -, made of plywood, and nearly 6 foot tall with the interior lined with luan. You need to provide a lot more information to get some meaningful help.

Nice looking unit. But that is a mighty large space to heat up. I am not sure 1500 watts is enough. Just thinking the interior wood is going to suck up a lot of the heat before equilibrium is reached and the interior air temp that you want to achieve is realized. Hopefully those with experience on building such a smokehouse will chime in. But I do like it!

That is a nice looking smoker. As I understand it you were using it for cold smoking and now are adding the option of hot smoking. That is a lot of space to try and heat with 1500 watts. A MES 30 has an 800 watt heating element to heat just a few cubic feet. Your trying to heat 80 to 100 cubic feet. Not saying it can’t be done but it looks like an uphill challenge to me.

Might help to raise your element up some off the floor. Some small velocity air movement also might help. Maybe others have suggestions beyond the obvious of more wattage.

Looks like a small sauna. Anyone know what the wattage is in a small sauna? You would need a heater larger than a sauna but knowing the heating requirements of a sauna would give you an idea of what you need.

This should give you some idea of the wattage of a sauna. But you're going to need to put out nearly double the temp that these elements do. I'm not an expert in that end of it, but you're going to have a power generation puzzle to figure out I'm guessing.
