After my recent heart attack and 7th stroke, I am working on 'heart healthy" ideas for different products.
One idea that I've kicked around with my caregiver and wife Linda, is a modified version of pork sausage.
Note: *The ever-popular turkey sausage is made from ground turkey, which is high in fats from the producers including the skin and fat. Not an option.
** Substituting 'salt substitute (Potassium Chloride) is also not an option as that can interfere with your medications and possibly be as bad for you as regular salt.
I have previously used boneless pork sirloins (97.8% lean) to make breakfast sausage with, seasoning it with my regular seasoning; but now the situation has changed with not having salt as an ingredient.
So, I am contemplating using Mrs. Dash no-salt seasoning instead. Yes, there will be a flavor difference, but nothing I am sure, in the correct amounts, that I cannot weather successfully. At least a semblance to a sausage product.
