Greetings...I want to wish all a Happy and Safe day with your family and friends.  Just a few reminders, there is no need to Warm the Bird to Room Temp before smoking and NEVER Stuff a Turkey to be Smoked. With all the cooking eating and leftovers, remember to handle foods in a safe manner. Get the Turkey going but Stop and clean all areas with a Sanitizing cleaner or 1 Tablespoon Bleach to a Quart of water as a Food Safe Disinfectant. Spray, let sit a minute and wipe with PAPER Towel or Air Dry. Dish Towels may be contaminated with bacteria from handling in the kitchen and not a good choice for drying disinfected surfaces.  Keep Hot Foods Hot, 140+ and Cold Foods Cold <40°F if at all possible..Buffet tables are popular with lots of guests coming but be mindful of the Time the food is out. Platters of foods that are not kept hot or cold left out 4 hours, other than Pies and Cakes, should be tossed. For optimum Safety, start putting foods in the Refer after 2 hours, so guest can have the time to get leftovers home without further risk. Party and be Merry but remember Alcohol and Driving don't Mix!  Stay where you are or find a safe way home. All the Best from me and my family to Yours. Have a Great Day!...JJ

Thanks Jimmy! The bride and I spent the day trimming the Christmas tree. Our dinner was a bowl of beef stew and toasted sourdough bread. It was a great day! We hope yours was great as well. thanks again.
