My wife asked if we could do a BBQ with a few friends for her birthday. I said no problem. I should have asked a few more questions lol. First a few friends ended up being 21 friends, plus the menu kept getting longer, and longer, and longer.  

The menu started as pulled pork and chicken. I told her I thought we should try the wicked beans recipe from the forum. After looking at it she wanted to skip the jalapenos. We ended up compromising, and decided to use 1 jalapeno. Ok the menu was set. Now for the plan.

The BBQ was set for Saturday the12th, and I had the 11th off for veteran's day. So, I told her I could cook the pulled pork on Friday and the rest on Saturday. She asked if I could cook St Louis ribs on Saturday if I was cooking the pork on Friday, and since some of our friends don't eat pork, how about adding some beef ribs? No problem,,,, honey it's your birthday.

Ok, the new plan is cook the pork on Friday, chicken, St Louis ribs and beef ribs on Saturday. Ok I can do this. Then she added what about appetizers? What would you like,,, honey? How about wings, ABT's, Zucchini and Squash. No PROBLEM,,,, HOOONEY.

Ok, the new plan is to cook the pork on Friday. Chicken, St Louis ribs, beef ribs, beans, wings, ABT's, Zucchini and Squash  on Saturday. Can I do this? Sure I can, well maybe, lol.

I need a time schedule if I was going to pull this off.

Appetizers   4:30

Dinner 6

First I needed a prep schedule:

Thursday Night prep butt

Friday night prep St Louis ribs, beef ribs, Beans, Zucchini and Squash

Friday Cook Schedule:

8 AM cook Pork Butt

About 8 PM Wrap and rest

About 10 PM Pull Pork, and refrigerate

Saturday Cook Schedule

Char-Griller pro side fire box

11:00 AM fire up with pecan and cherry .

11:30 AM Pork Rib into smoker

2:30 Wrap st louis ribs,

2:30 Beef ribs into smoker

3:30 ABTs on.

4:00 Wrap Beef ribs

4:30 ABTs off and serve

4:30 unwrap st louis ribs

5:00 Unwrap Beef ribs

5:15 Sauce st louis ribs, and Beef ribs

5:30 Ribs off to rest

Vertical smoker

1:45 Fire up with Pecan

2:30 Beans, and Cabbage in vertical smoker

5:30 Beans and cabbage off  

BATW ( Bad Ass Tailgating Weber )

2:30 Fire up with apple

3:00 wings on

4-4:15 off

6:30-7 load it up fire wood, light it.

Gasser

3:45 fire up with apple

4:00 Zucchini and Squash on.

4:20 Zucchini and Squash off ready to serve

4:30 first load of chicken on.

5:15 first load off, 2[sup]nd[/sup] load on

6:00 2[sup]nd[/sup] load off

Crockpot

3:00 ReHeat Pulled Pork.

Well I pulled it off, but only because Lorrie was a great help. She did all of the background work. ie: had things ready for me when I asked for them, set up the serving table and also made a fabulous Pineapple upside down cake.

Yeah I use to do parties like that when I was Your Age!....You did a GREAT JOB!....JJ
 
We used to do a black tie party for 80 every Christmas in our home and did all the food so a plan is essential. Looks like yours worked well
 
Not sure how old you are, but I'm 53  I just look young for my age, and I'm not in the pics, lol
Whoa!...You would look GREAT for your age, I figured you were one of those two guys pictured, I put you at 35-38 tops!.... I'm 49 but mostly feel 69!...JJ

Tom-everything looks great!  As for those Wicked Baked Beans-change them up to suit the family's taste.

Dutch, the Wicked Baked Beans were a HUGE success, I will be doing them all the time.from now on.
