Hatch seasoning coming to an end. They were starting to look a bit rough yesterday so I did not get any but I used up what I had to make this so I going to get some today. They be fine after roasting them. I been putting them in everything.

Started out making some stock.

Than roasted the veggies.

Processed the veggies and spices with some lime.

This food processor a beast but it weights a ton! Thanks Jeff!

This taste so good at this point I took some out for salsa. How did I do tallbm tallbm ?

IMG_20240814_132903575.jpg

Added chicken stock and reduced for 20 minutes. Than added sour cream, shredded chicken and cheese. I bought the wrong Mexican cheese but made it work. It was the crumble type not the melting.

I normally would of used my low carb corn tortilla's but had some HEB flour that needed to be used so went for it. They worked out pretty good. This would of been better with the right cheese but still good. So fresh tasting.

Oh man Brian that looks great, I wish I was on the river when you bring these. Unfortunately there is no hatch chili season here in NY.

You nailed it!!! That stuff is just so good as is right?! That's how you know it's going to make an awesome sauce as well hahaha.

I imagine you will be doing this again and it will only get better and better aye?! :D

Publix had some Hatch in stock. Publix wanted 5.99/lb

I love them, I don't love them 5.99/lb. A lb really doesn't go a long way when I'm scarfing them down like tater chips.

Still checking our local Kroger affiliate. They usually get some every year and they aren't gold plated and diamond crusted.

Is that price raw or roasted peeled and cleaned?
If raw, yeah, that's crazy.

Looks amazing Brian, I’d be all over a plate of that!

Wish hatch season was year round, dang tasty chilis!
