Hash Brown Omelet (I got this from The Flat Top King on you tube) ... I made it MY WAY ...
Shredded some potatoes and soaked them in water for 30 minutes (changed the water twice).. Put in a towel to ring out as much water as possible... Oiled down the griddle in a rectangle (football field) shape and put the HB's down... Try not to leave any openings... Seasoned with my mixture of SPOG ... I put the bacon (homemade) and the sausage links on as well...
Let these cook until the meats are done and the HB's are 3/4's of the way done on the bottom side (do not move HB's around, just let them cook)... Checking the bottom for doneness... Cut the links and bacon into pieces when done cooking and spread them around on top of HB's...
I wisk 6 eegs and some half and half together and pour over the top ... Keeping the runaway eggs gathered up and in the omelet... Sprinkle cheese over the top of everything...
I let that cook for 3-5 minutes and then TRI-FOLD (3 ways) and let cook a few more minutes... Then flip it over, sprinkle more cheese on top and let cook for another 3-5 minutes.. Cover if you want to melt the cheese..
1/3rd flipped (then flip from the other side on top of this). It's gonna try (and will) to break on you instead of folding.. Just try to hold it back together for a lil bit and it usually will stick..
And you end up with something like this.. OH... As I have said, I use a drywall knife for my spatula ...
And the MONEY SHOT (on our finest china)
