hello and greetings, wow- what a great resource this place is. lucky to have found it. everyone calls me "bear" and im looking forward to participating in the threads. currently reside in texas but im louisiana thru and thru. grew up around smoker pits and used to do BBQ catering. my current intrigue however is sausage making. ive done this for awhile also but recently decided to take it up a notch or two. long term plan is to open up a custom smokehouse/sausage shop.

I am also new here and just moved to Baton Rouge from Kansas City MO.
Found alot of great food and people. I'm a sausage hound and have been sampling the Andoui? and Boudan ? If I spelled those wrong sorry.

boudain, also found some great boudain at a gas station in La Place

Welcome to SMF, Bear! If you're making sausage do you have Rytek Kutas book? I just got it for Christmas and from what I understand it is one of the sausage making standards.
