Happy Columbus day to you as well!  A Kamado Joe Big Joe showed up a week ago. Today was a good chance to just play with it's temperature control without worrying about cooking something on a timeline.  This week it has seen a Turkey, Ribs and Pizza; but it is still going through the paces before a Brisket is done on it.
