Hand Trimmer and Slicers Advice

Hey everyone! I'm new here and kind of still exploring the forums. I am in the planning phase of opening a facility to produce jerky. I figured I'd start here and branch out as needed.

Does anyone have experience using either electric or pneumatic trimmers? I have been trying to research cost and different models but the info I'm finding is spotty at best.

Also, I'm looking at larger scale meat slicers. Not the deli kind. The kind where you can put in a whole roast and it will slice it to a specific thickness. Again, I'm having a hard time find info on these products as well. I've found a few but there is limited info on pricing.

Any experiences, good or bad, with vacuum tumblers? If so, what were the pros and cons for you?

I know these questions are kind of all over the place but I appreciate any insight y'all might have.
 
Can't help with the Hand Trimmer as I have never seen one. Every Butcher I've seen can work a a set of Knives fast enough to keep up with a briskly moving production line.
Most of the big name Slicer companies make large Auto-Slicers. Set the thickness and just keep the carriage loaded. Globe and Hobart are reputable...JJ
 
This makes quick work of removing fat and our cutting large sub-primal to size...JJ
