I put 2 large chicken boobs seasoned with lemon pepper together 69 style and tied up tight like a little roast.Damn thing has stalled on me at 155-156 IT. It's been on 2hrs now and I'm hungry too....
 
Why tie them up? Helps keep juices in? When you cook something like chicken are you using curing salt?

Keeps juices in and cooks more evenly.No on curing salt.I do wet brine( sea salt,apple juice and herbs) poultry often but not tonight.
