Ham and bean stew

The free spiral cut ham is going to feed this guy all week! The wife doesn't eat pork, and both of my boys are visiting relatives for the holiday week. Ham sandwees for lunch and now onto the ham and bean stew!

I boiled down the remains of the spiral ham. Salvaged all the meat that I could.

Fired up some of the magic trilogy, plus Thai chiles.



Added some beans that I had soaking overnight, the stock and all the ham scraps. A bit more water and we are simmering away. Not sure this will be ready tonight. So looks like ham sandwee and left over beans!!

Thanks Disco! No waste is my motto. The only thing I would do differently next time is during the initial boil I would put a whole peeled onion in to help keep the scum down. That's a trick I learned from a Vietnamese chef that they use when making PHO. I was shooting for a pretty clear broth and I achieved it, I did have to chill and remove the fat, then strain a couple times.
